Sanglier Cellars 2018 Left Tusque Cabernet Sauvignon
FARMING
Sustainability is our everyday approach to farming. We walk the vineyards, know the vines, we understand our boots on the ground are the most important thing we can do to ensure our farming is in balance with the environment. We count insects, we promote biological diversity, we use organic solutions. We are good stewards.
VINEYARD
High up the flank of Sonoma Mountain this west facing planting sits alone above the plains that stretch toward the Pacific. The soils are predominantly Goulding-Toomes complex, and work well for cab. Catching the late afternoon sun at 1,227 feet in this cool region is the key to growing this excellent cabernet. Here the vines synchronize with the climate by ripening slowly and evenly.
WINEMAKING
Clean, Hand-Crafted wines are what we do. We have been doing it for years. Excellent vineyards and superb farming lend themselves to non interventionist winemaking. We use time, temperature, and hand pump overs to achieve the texture, extraction of aromatics and depth of flavors in our wines. No additives can compete with keen observation, hard work, and patience in the cellar. These wines are unfiltered and unfined, these are honest wines.
THE WINE
Truly beautiful color and when I first lifted my glass, the fragrance of violets, black currants and a touch of cedar and spice were pleasantly filling the air. What I smelled followed through on the palate with elegant, balanced flavors extending deliciously through the mid palate finishing with a mouth watering savoriness. This is a wine of structure and depth. Chalky tannins integrate nicely as the wines sit in the glass.
